Prepare

I don’t know about you, but when I am busy (which is all the time), it is often hard for me to resist little snacks or treats when I am out and about. I have found that it is easy to just throw some treats together like once a week, and then have them readily available to just put in a little Tupperware or baggie, making it easy to take them on the go.

Cookies, bars, candies and muffins are easy to transport, thus making it easy to have grab and go treats! It also makes it so much easier to resist the yucky stuff and stay “on plan”.

Ingredients

  • 1 package (4oz) of unsweetened baking chocolate
  • 1/2 cup heavy whipping cream
  • 2 tsp vanilla
  • dash of salt
  • 1/8 cup MCT oil
  • 2 tbs pyure sweetener
  • 1/2 fine ground erythritol (or sweetener of choice)
  • 1 cup of unsweetened shredded coconut
  • 1 cup of raw almonds

Instructions

  1. "!"In a medium pan:
  2. Add water. bring to soft boil.
  3. "!" In a medium bowl:
  4. Place the medium bowl on top of the medium pan of water. (This will allow the chocolate to not burn.)
  5. Add in the Chocolate bar (add in small pieces at a time)
  6. With a whisk, mix continuously, until melted.
  7. Add in MCT oil and continue mixing.
  8. Add Heavy whipping cream slowly, and mix continuously. (this part is important because the chocolate can curdle easily if you add in cold cream too fast)
  9. While mixing, add in the remaining ingredients.
  10. Once the chocolate is melted and creamy, turn heat off and continue whisk occasionally.
  11. Pour melted chocolate into small baking cups.
  12. Add two to three almonds per cup.
  13. Sprinkle tops with desired amount of shredded coconut.
  14. Place in fridge until firm.
  15. Enjoy!

Z’s Lemon Cream Cheesecake

Like a Drink of Lemonade

This cheesecake is divine! So refreshing and yummy, like a summer afternoon drink of lemonade!  to be honest, I am not much of a lemon fan. I usually pass up lemony desserts. I actually made this for my husband because I had a bunch of extra lemons.

You see, I had done the Master Cleanse, and ended up stopping a day early. So needless to say, I had a ton of extra lemons to use up. I hate to waste food, so I ended up thinking, “I should make something for my husband!”. This is the recipe that came to mind!

I have to admit that I really didn’t think I would like it, but I tried it always. Boy am I glad I did! It seriously is one of the most refreshing desserts I have ever had!

It is delicious!!!

I am so glad that I tried it! I am learning that you always have to at least try things! You may have written foods off when you were younger, like I have, but you never know if your taste buds have changed! Mine have for sure!

Easy as Pie!

This recipe cannot get any easier! I made it in my Vitamix! I seriously cannot say enough about how easy it is to make things when you have a good blender!

Yes please!

I just added the whipping cream and whipped it up (seriously in a matter of 5 seconds!), and then added my cream cheese, sweetners and vanilla’s to it, and blended! It seriously only took a minute!

I say “vanilla’s” because I added in a “secret ingredient”, that in my opinion, made this amazing!

Any of ya’ll ever heard of the Vanilla Creme stevia drops? If you haven’t used this before, it will change your world! Such a creamy vanilla taste, with none of the aftertaste that I have come to hate about stevia! I even love to add a couple drops to my coffee in the mornings!

I originally wanted to make a pie, but it turned out so simple, creamy and delicious that I felt it would be wrong to try to make it anything but this yummy and refreshing cheesecake! Maybe one of these days I will make this cheesecake into a pie too! We’ll see. 😉

This was such an easy cheesecake to make! If you ever want a pretty and decadent dessert that makes you look like a genius dessert maker, but takes all of 20 minutes total to make…this here is your ticket!

You can even dress it up with some whipped cream, more lemon slices or just eat it plain! It’s so easy…why not?!?!?

Z’s Lemon Cream Cheesecake

Ingredients

  • "!For the crust:"
  • In medium bowl add:
  • 2 cups almond four (I used finely sifted)
  • 2 tbs brown sugar substitute
  • 1 tbs Super Sweet blend
  • 1/8 flax meal
  • 1 stick melted butter
  • "!For the Filling:"
  • 1 1/2 cups heavy whipping cream
  • 2 8oz bricks of cream cheese
  • 1/2 tsp vanilla cream stevia drops
  • 1/2 tsp vanilla
  • Juice of 3 fresh lemons (I just cut mine in half and squeezed into the blender with the other ingredients)
  • 2 tbs Super Sweet blend
  • 3/4 cup Gentle Sweet

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In Medium bowl, mix all the ingredients for the crust (I use my hands, but you can use a spoon or spatula).
  3. Place in greased (I used Pam Baking Spray) Springform pan.
  4. Press down with your hands until spread out evenly and firm.
  5. Bake for 12 minutes or until edges are golden brown.
  6. Let cool completely.
  7. "!For the Filling:"
  8. Whip the heavy whipping cream first, in your high speed blender (or a stand mixer).
  9. Add in the softened cream cheese and remaining ingredients.
  10. Blend or mix until smooth.
  11. Spread mixture evenly over the cooled crust.
  12. Place in freezer for 3 hours or until firm.
  13. Garnish with sliced lemons or whipped cream. Or leave plain!
  14. Enjoy!

Notes

The longest part about this baking process is the waiting for it to firm up in the freezer! It is so easy to make!

This cake was so easy to make, yet one of the most decadent and beautiful cakes I’ve made. It not only makes for a gorgeous dessert, but because it is sugar-free and low carb, it would do great for breakfast with a piping hot cup of coffee!

This cake is not only beautiful, but actually has health benefits! This cake has oat fiber and collagen in it!

Z’s Cinnamon Pecan Swirl Bundt Cake

A delicious and decadent bundt cake that is too easy to make!

Ingredients

    For the Cake batter:
  • 1/2 cup egg whites (carton works great)
  • 4 eggs
  • 1 tsp xantham gum
  • 1 tsp vanilla
  • 1/2 cup cottage cheese (2%)
  • 1/2 cup sour cream
  • 1 cup erythritol (or gentle sweet)
  • 2 scoops collagen
  • 1 cup almond flour
  • 1/3 cup oat fiber
  • 1 1/2 cups pecans (hold 1 cup for swirl)
  • pinch or salt
  • 1 tbs baking powder
  • For the cake swirl:
  • 3 tbs cinnamon
  • 4 tbs melted butter
  • 1 cup chopped pecans
  • For the Icing:
  • 1 brick cream cheese (8 oz)
  • 5 tbs gentle sweet
  • 1 tsp vanilla
  • 2-3 tbs half and half

Instructions

  1. Pre-heat oven to 350 degrees
  2. In a high speed blender:
  3. blend egg whites, eggs and xantham gum for 40 seconds
  4. Add in the remaining cake batter ingredients
  5. Blend for 45 seconds or until creamy
  6. Add cake batter to a greased bundt pan.
  7. Mix the cake swirl ingredients together.
  8. Add the swirl mixture in 4 large spoonfuls, on top of the cake batter.
  9. Swirl the cinnamon/pecan/butter mix all around in the cake pan, until well swirled.
  10. bake cake for 45 minutes.
  11. Let cake cool completely.
  12. Frost with the cream cheese Icing. Top with extra pecans and dust with cinnamon.
  13. Enjoy for a dessert, or with coffee for breakfast!

Z’s One Week Fuel Cycle Challenge

Hey Ya’ll!

Today

Today begins my one week fuel cycle and I am challenging you to join me!

It is easy! And, with amazingly decadent food like bacon, chocolate, butter covered veggies, waffles, sprouted breads, healthy grains and succulent meat…why wouldn’t you?

I mean, HELLO!

Let me start with explaining what a fuel cycle is…

A “fuel cycle” is a week that is intentionally designed to help you get over that “slump” of a healthy weight loss stall. I don’t know about you, but I have been in a “weight loss slump” for the past few months. It happens to all of us. Especially if you are in your thirties!

A one week fuel cycle utilizes three days of “deep S” foods such as bacon and eggs, bulletproof coffee, coconut oil covered dishes and basically, healthy fats. Your “fuel” source on these three days is FATS. The three deep S days are meant to clear glucose from your body. It helps to break down the glucose that are in your cells, and causes your body to be in a state where you maximize fat-store burning. After those three days, you go into 2 days of “fuel pull” days.

For two days, you are on fuel pull. That basically means that you will be “pulling the fuels”. You will eliminate FATS and CARBS, and mainly focus on protein. Of course, protein should be part of each meal, so pulling the “fuels”, is when you just eat protein and no fat or carbs.

When you take away your body’s source of fuel, and only feed it protein, it forces your body to burn your fat stores. THIS IS WHY I LOVE FUEL CYCLE! Yay for burning those stubborn fat areas (mine is my stupid mid-section). Doing this for 2 days is probably the max amount of days you want to deprive your body from fats and carbs. But, it does really burn those fat stores!

The last two days of your fuel cycle will be “E” meals. The last two days are the easiest for me, because I love to bake healthy E treats and meals. Healthy grains such as oatmeal, quinoa, beans and brown rice are easy to include in any kind of meal! What these two days do for your body, is allow your “guts”to be nourished after 5 days of “being in the trenches”. You have already cleared your body of glucose, and then you have burned off fat stores. These 5 days can really do a number on your intestines. That is why the last two days of E meals are so important to finish off your week.

THM suggests that you do a max of 2 weeks of fuel cycle because of the effect on your system. People who do extended forms of this cycle tend to do more damage internally then they even realize.

That’s why I love the THM fuel cycle. It really is a “doable” way of “resetting” your body in a healthy way.

I have done the fuel cycle twice, and both times, I have not only lost weight, but I lost bloat too! It’s amazing to see the results, and more importantly, to FEEL the results!

But before I get into the recipe, let me just talk a minute about guilt-free eating!!!

Can I just say, I eat like a queen! I get to eat absolutely delicious food every day…and all because of the food freedom found through THM (trim healthy mama)! This lifestyle truly has become such freedom! Not only do I get to eat yummy cookies like these all the time, but I get to experiment and create such fun dishes and recipes because I understand the “science” behind eating healthy!

This is my youngest boy. His name is Josiah. He is my bundle of energy, and my risk-taker! He loves to wrestle with his brothers, climb trees outside, ride his bike, play out in the back field for hours and mostly just get in to trouble in whatever way he can find. 🙂

He always has some sort of scrap or bruise from his excessive need for speed and adventure, just like in these pictures. But, he does keep us on our toes, and we think he is such a blessing!

The Recipe

Needless to say, these cookies are a hit! They just have such an amazing texture! You seriously cannot tell that they are sugar-free and only made with almond flour!

There is a “secret” ingredient though… Z’s 3 ingredient Peanut Butter Recipe (keep an eye out for the recipe). Yes, I made the peanut butter from scratch!!z's peanut butter

I cannot say enough about my amazing Vitamix blender! It literally took me under 2 minutes to make scrumptious homemade peanut butter! And, it proved to be infinitely better than store-bought natural peanut butter!

Back to the recipe….

I did use my homemade peanut butter for this recipe, but you can use any peanut butter of your choice. I suggest a natural no-sugar-added peanut butter, to keep it in a sugar-free state.

Another note I might add is that, after you take them out of the oven, let them cool completely before handling them. I just left mine on the cookie sheet. They tend to keep their texture better that way.

They turn such a beautiful golden brown around the edges after they come out of the oven, yet they stay nice and chewy in the middle!

A delicious and chewy classic peanut butter cookie...without the guilt!!!

Ingredients

  • 2 sticks of butter (1 cup)
  • 1 1/4 cup of Gentle Sweet or preferred sweetener
  • 2 tsp vanilla
  • 3 eggs
  • 1 tsp molasses
  • 2 cups peanut butter (Z's 3 ingredient peanut butter is best, but you can use preferred peanut butter)
  • 1 tsp salt
  • 3 cups almond flour
  • 2 Tbs Super Sweet (if you like sweeter cookies)
  • 1/4 cup pressed peanut powder (I used THM)
  • 1 tsp Xantham gum

Instructions

  1. Preheat oven to 350 degrees
  2. In stand mixer mix 2 sticks softened butter-until creamy
  3. Add sweetener -mix until fluffy
  4. Add peanut butter, eggs, vanilla and molasses-mix until creamy
  5. Add in all dry ingredients while mixer is stopped
  6. Mix altogether until cookie dough consistency
  7. Roll dough into balls and place on uncreased cookie sheets
  8. Use fork to make classic criss-cross pattern
  9. Bake at 350 degrees for 13 minutes or until edges are golden brown
  10. Let cool on cookie sheets
  11. Eat and Enjoy!!!

My favorite breakfast

This breakfast is the easiest pesiest breakfast ever! Also, a great way to switch it up a little bit and have an E breakfast that is NOT oatmeal!

I have to say, French Toast is hands down my favorite breakfast.

I make a homemade berry sauce (Z’s Very Berry Sauce on my Recipe page) that compliments this dish amazingly! The berry sauce is also sugar-free and falls under the THM-FP status.

When you use my berry sauce, there is no need for syrups (see yesterdays post on The Skinny on Sugar in the Healthy mom page).

French toast

Yummy Sourdough Bread

I use the San Luis Sourdough bread because it has the best texture and ingredients in a store-bought bread. Of course, if you make your own homemade bread from a sourdough starter, then that is going to be AH-mazing! But, for “drive through sues”, this bread does great. You want to make sure that your bread is made from a starter, doesn’t have fat and doesn’t have sugar.

I also love to buy the unsweetened vanilla almond milk from Costco. It is not full of the fillers and sugar that other almond milks have. I also love the fact that there is a touch of the vanilla flavor in the French toast when you use this.

Of course, to stay in the THM-E territory, you have to stay with egg whites, but when I make this for my kids, I will sometimes whisk in a couple eggs with the yolks, for a yummy crossover. Crossovers are great for growing kids! Also, I think that whole eggs make it taste even better. But, alas, I need to stay in E (THM-Energyzing) territory. 🙂

  1. heat skillet on medium heat
  2. Whisk all wet ingredients in a bowl until well mixed.
  3. dip bread in egg mixture
  4. cook on heated skillet until browned un both sides
  5. serve with Z's Very Berry Sauce
  6. or desired syrup.
  7. Other topping options are berries and 0% greek yogurt, cottage cheese (2%) or a dollop of whipped cream!

Z’s Strawberry Custard Ice-Cream

Ice-Cream…The Easy Treat

Let me just say, that I have not really made a lot of homemade ice-cream, ever. I have no idea why the heck not! It really is very easy, especially if you have a Vitamix blender (shameless plug;).

This post is mostly pictures of my amazingly handsome boys devouring this ice-cream. I couldn’t help myself.

You see, I just got my 50 mm camera lens, and it just takes too good of pictures to not practice with it!

My boys had so much taking the pictures, but they especially loved eating my “prop” strawberries (for my food photography), along with the actual ice-cream. It was awesome to just sit and watch them enjoy this decadent treat, and secretly know how good it was for them!

Also….priceless memories.

They picked at the strawberries and smacked their lips as they thoroughly enjoyed their treat.

They had no idea that this ice-cream was actually healthy. They eat everything I make for them, but they especially love when mommy makes them treats!

Have you ever wondered how you got so blessed? I do, almost every day. I know that my husband, these boys, my baby girl, and even the ability to stay home with them and make them healthy food…it is all a gift. A HUGE AMAZING GIFT. It truly is. I am positively and amazingly blessed!

The Recipe

I actually wanted to make a vanilla “custard” ice-cream, but ended up making it into a strawberry version of that. I was looking for something sweet on my fuel cycle (THM week long fat burning diet), and I started to put something together. This is the recipe that came out. So, I guess you could say that it technically is a custard ice-cream.

Custard ice-creams a type of ice-cream that is old fashioned. Its kind of how they used to make ice-cream, before ice-cream became so processed.

“One early commercialization of frozen custard was in Coney Island, New York in 1919, when ice cream vendors Archie and Elton Kohr found that adding egg yolks to ice creamcreated a smoother texture and helped the ice cream stay cold longer. In their first weekend on the boardwalk, they sold 18,460 cones.” -Wikapedia.com

The eggs are what make it a THM S. It’s a great way to eat a scrumptious dessert, while staying “on plan”.

Z’s Strawberry Custard Ice-Cream

Ingredients

  • 6 cups unsweetened vanilla almond milk
  • 6 eggs
  • 1 bag frozen strawberries (about 4 cups)
  • 1/2 cup gentle sweet (or preferred sweetener)
  • 1 tsp vanilla
  • 2 tbs glucomannan
  • dash of salt

Instructions

  1. In your blender: blend the eggs, almond milk and vanilla until smooth.
  2. In a large pot: add blended mixture and cook on medium-high heat until mixture becomes bubbly.
  3. Whisk often while heating.
  4. Before the mixture becomes bubbly, add your glucomannan, sweetener and dash of salt.
  5. Continue whisking until bubbly.
  6. Once the mixture gets frothy and bubbly, turn off heat and let cool.
  7. Once cooled, put in large Tupperware, and stick in freezer for a few hours.
  8. Don't freeze the mixture solid.
  9. Take out of freezer once the mixture has become very cold, but not frozen.
  10. Add mixture to blender and add frozen strawberries.
  11. Blend until smooth.
  12. Serve with extra strawberries or plain.

THM Fuel-Cycle

This week, as you know from my previous post, I am doing a THM fuel-cycle. It is a great way to boost your metabolism and burn off that unwanted layer of “holiday fat”. It also is very cleansing to your system.

I have done the fuel-cycle twice before, and have both lost weight, and felt better afterwards. If you have any interest, just check out the Trim Healthy Mama book, and look for the One Week Fuel-Cycle (Chapter 28. page 429).

The thing is, I have had a hard time finding breakfasts that fit the Deep S guidelines for the first three days of the cycle, that don’t include eggs and bacon.

This recipe is also Keto!

So today is your lucky day, because I made one up!

“What to do with these avocados….”

I stood in my kitchen this morning, and thought, “What am I going to make for breakfast?” Eggs just didn’t appeal to me this morning, so I decided to make up something that would fall in the Deep S category.

As I was thinking about what I could possibly make, I happened to look over at my fruit bowl and saw a bunch of avocados just sitting there, all innocent like. I forgot that I had bought a bunch at Costco. That is where my inspiration came from! These bad boys had no idea what they had coming to them. 😉

And that, brings us to the “secret ingredient”. Avocado! Who would have thunk? And there is yet another secret ingredient that I added….kale and spinach! I know, I know…you’re probably thinking, “Nasty! Those ingredients sound down right nasty!!!”. Trust me, it didn’t sound that appealing to me at first either. But wait for it…

Now, I had read a bunch of recipes that claimed that if you add cocoa to avocado, spinach or kale, the cocoa seems to balance out the flavors and causes it to not taste like those ingredients at all!

Guess what??? They were right! I couldn’t taste anything but chocolate!

Hold the phones!!!  “Z, you’re telling me that I can have all my veggies and healthy fats in a yummy chocolate shake?!?!?!”

Ladies…Im telling you, yes!!!

After I made my shake, I added Reddi Whip cream to it, and it just made that recipe awesome! You don’t have to add it, but it does give you that “malt shoppe” chocolate shake feel! Why not?!?

Ingredients

  • 3-4 Ice cubes
  • 1 1/2 Cups unsweetened vanilla almond milk
  • 1/2 avocado
  • 1 cup of kale and or spinach
  • 1 scoop vanilla protein powder
  • 1 scoop collagen
  • 4 Tbs unsweetened cocoa powder
  • 4-6 Tsp sweetener of choice (I used super sweet)
  • Reddi whip whipped cream (optional)

Instructions

  1. Add all ingredients to blender and blend well.
  2. Add whipped cream to garnish, and because its sooooo yummy!

Parmesan Garlic Zucchini

I made these bad boys tonight, with my Creamy Roasted Red Pepper Chicken (Recipe to follow soon;). They pair great with a savory and creamy dish like Chicken! The thing is..they are SO easy! Did you hear that?? EASY! I pride myself on discovering easy recipes, because….I have 4 kids, and a lot of times, I don’t have time to spend on extravagant dishes.

“Aint nobody got time for that!!!”

There is a “secret ingredient” in these that makes them soooo good! Can you guess it? NUTRITIONAL YEAST! I know..its a THM thing (trimhealthymama.com), or at least they made it popular lately, but it really is good! It adds so much flavor to things, and has great health benefits…Heres a link to check out the benefits-Nutritional Yeast  .

These two guys are my go-to’s for flavor! I love, love, love garlic salt! It can be used in so many ways, but it just has that perfect flavor…especially for veggie dishes!

Heres my happy zucchini…

I just cut them in half (after chopping off the ends), and then cut them in thirds. Then toss them all in a bowl…

Put all the ingredients in a bowl, and toss. Look at all that texture! Yum!

These would also be great for grilling in the summer! If you want even more flavor, you could broil them for a few minutes to get them a little toasty, and then bake. But, I like them just like this.

Heres the ingredients and instructions….

 

 

Parmesan Garlic Zucchini

  1. 6 medium size zucchini
  2. 3 tbs olive oil (or melted Butter for THM-S)
  3. 4 tbs garlic salt
  4. 3 tbs nutritional yeast
  5. 1 tsp course black pepper

Instructions:

Cut the Zucchini in half, and then cut in thirds. Put in Bowl. Put all ingredients in bowl, and toss until well coated. Place on baking sheet. Bake at 400 degrees for 20 minutes, tossing at about 10 minutes. Garnish with lots of shredded parmesan cheese. Enjoy!
